 This raw vegan cheesecake is the ultimate no-bake indulgence. Made with a creamy cashew base, almond-date crust, and topped with vibrant berries, it’s as beautiful as it is delicious.

Ingredients:

For the 1/2 cup dates, pitted

  • 1 tbsp coconut oil

For the filling:

  • 1 1/2 cups cashews (soaked 4 hours and drained)

  • 1/4 cup coconut milk

  • 1/4 cup maple syrup

  • 1/4 cup coconut oil

  • 2 tbsp lemon juice

  • 1 tsp vanilla extract

Topping:

  • Fresh mixed berries (blueberries, raspberries, etc.)

Instructions:

1. Blend crust ingredients until sticky. Press into a lined cake pan.

2. Blend all filling ingredients until smooth and creamy.

3. Pour filling over crust and smooth the top.

4. Freeze 4–6 hours or until firm.

5. Top with fresh berries and let thaw for 10 minutes before serving.
