Fluffy Vegan Pancakes with Maple Syrup & Berries

Start your morning with a cozy stack of fluffy vegan pancakes, topped with sweet banana slices, fresh blueberries, and warm maple syrup. This easy, plant-based breakfast is egg-free, dairy-free, and absolutely delicious.




Ingredients:

  • 1 cup all-purpose flour

  • 1 tbsp baking powder

  • 1 tbsp maple syrup

  • 1 cup unsweetened plant-based milk (almond, oat, soy, etc.)

  • 1 tsp vanilla extract

  • 1 tbsp melted coconut oil or neutral oil

  • Pinch of salt



Instructions:

  1. In a mixing bowl, whisk together flour, baking powder, and salt.

  2. In a separate bowl, mix plant milk, maple syrup, vanilla, and oil.

  3. Combine wet and dry ingredients. Stir until just mixed (don't overmix).

  4. Heat a non-stick skillet over medium heat and grease lightly.

  5. Pour 1/4 cup batter for each pancake. Cook until bubbles form, flip, and cook the other side.

  6. Serve warm with banana slices, blueberries, and extra maple syrup.
